It is RHUBARB time! We have 2 huge Rhubarb plants and one big ‘patch’ of it and considering only one family member REALLY enjoys it, I have been blessed with more than enough for our family!
I keep putting off going out and harvesting it, in the hopes that we’ll come across some organic strawberries in bulk—- so we can put up strawberry rhubarb pie filling in the pantry! I usually cut up & freeze my rhubarb, however this year I’d hoped to can it (in my quest to put up our food in a state that requires NO grid!) and having the strawberries would be ideal–but I may just have to can the rhubarb and can some strawberries later, and mix them up when I make a pie! Either way its a blessing for sure
Anyone ever tried dehydrating their Rhubarb? I mentioned that to the family and they all gave me that look, as if I’d gone too far in my dehydrating quests. Ah well– we’ll see, maybe I’ll have so much I’ll try dehydrating a tray of it Who knows maybe they’ll all LOVE it. ;P
Anyone have a FAVORITE Rhubarb recipe to share? I’d like to try something new with it besides the standard Coffee Cake and pie fare. Chime in!
